
Passover prep is well underway but finding the ingredients has NOT been easy. Lancaster is not a Jew town.
We've had to go to 5 grocery stores to find the following:
matzo
matzo meal - never found
kasha
mini bowties
potato flour
gefilte fish
matzo ball soup mix
kosher grape juice - ended up getting giant brand due to the cost
I've made a mess so far with the sponge cake and kasha and bowties. I tried to make mini sponge cakes but they didn't come out of the pan, so we'll be eating cake squares from the boring pans. The kasha came out fine and is chilling on the desk under the thunderstorm bc there's no room in the fridge.
Next I'm making an Italian Love Cake which has nothing to do with Passover but everything to do with my Mom's birthday.

Yesterday I made a fabulous noodle kugel, just for the hell of it since I had forgotten that we can't eat it Saturday but had already bought the ingredients.
Then for dinner I made a Rachel Ray (not a huge fan but sister-in-law liked the recipe) called Renaissance of Tuna Noodle Casserole - which was nothing like Tuna Noodle Casserole but pretty damn delicious.
You, too, can make it, but seriously, Rachel. 15 minutes? Big fat liar. More like 1 hour!
